Avocado Toast with Cherry Tomatoes

Healthy, light, and flavorful, this recipe is simple to make and ideal for breakfast, snacking, or even a light meal.

 

INGREDIENTS

 

▢ 2 bread slices

▢ 1 ripe avocado

▢ 1 teaspoon lemon juice

▢ Salt and pepper, to taste

▢ 6 cherry or grape tomatoes, halved

▢ 1 teaspoon balsamic vinegar

▢ 1 teaspoon extra virgin olive oil

 

INSTRUCTIONS

 

  1. Toast the bread slices in a toaster until golden brown.
  2. Halve and pit the avocado. Scoop the flesh into a bowl and mash. Mix in the lemon juice and season with salt and pepper to taste.
  3. Spread the avocado mixture evenly onto the pieces of toast. Arrange the sliced tomatoes on top.
  4. Drizzle with balsamic vinegar and olive oil. Serve immediately.
