Fruit Cups
Mexican Fruit Cups are made by filling plastic cups with fresh fruit salad and a sprinkling of Tajin seasoning. These healthy fruit cups make a great snack or a light breakfast.
INGREDIENTS:
Watermelon
Cantaloupe
Pineapple
Mangoes
Jicama
Limes
Tajin seasoning
VARIATIONS:
Add Mexican papaya and cucumber to the mix.
DIRECTIONS:
- Peel and chop: Peel and chop fruit into 1-inch cubes. and to a large bowl and toss to mix.
- Fill cups: Evenly distribute the chopped fruit and lime wedges into 6 18-ounce clear plastic cups leaving enough room to place a lid on top.
- Season: Sprinkle Tajin seasoning over fruit and add a lime wedge to each cup.
- Refrigerate: Chill in refrigerator before serving.

NOTES:
Tajin is a mix of chile powder, dehydrated lime juice and salt. It contains no artificial coloring or flavoring or added sugar. It has a zesty citrus flavor with a very mild kick to it. You should be able to find Tajin it at your local market and it’s inexpensive to purchase.
